Sounds like you might be sleeping by a draft. Try keeping your room a bit warmer, checking for drafts and/or keeping a vaporizer by your bed so you can breathe in warm, moist air. That should help.

maybe when you sleep you breathe mostly through your mouth...that tends to makes your throat dry and that's the reason why you wake up with sore throat.
You're breathing more through your mouth then your nose. Keep your mouth shut.
