Celery, Pop Corn (butter and salt free), Whole Grain Chips, Fruit.
I find crunchy things are helpful for long drives. I particularly like carrots which have almost on calories.

Constant eating is unnecessary... eat 4-6 meals a day - dividing up about 2000 to 3000 calories depending on metablic rate, and that's enough.
