You are probably still eating something that contains gluten. It takes a long time to get gluten free down and even then, people on a strict gluten free diet will accidentally be exposed. Go to www.celiac.com for a list of safe ingredients and another list of unsafe ingredients and another of possibly unsafe. Stay the gluten free course. It could take at least a month and maybe 3-6 months for your body to mend and start getting the proper nutrition. Add in a gluten free multivitamin and some omega complex capsules to help with the healing process.
I personally had chronic hives for 10 years before I found out by accident that gluten was causing them. I had gone on the Atkins diet and about 3-4 weeks after I started the diet, the hives stopped. I have been gluten free hive free for almost 9 years now.
Hives are not usually caused by stress, If you have a feeling that your throat is closing up you should definitely be careful. The "made in facilities that process wheat" is scary. It means that the product itself is gluten free, but it is possible it might have come in contact with wheat - from the equipment or the packaging or something. The chance is there, but it should be slight. It does sound like things are improving. But I think you should probably check with your doctor. Check here.
