Recipes for someone that was just diagnosed with type II diabetes?!


Question: My boyfriend was just diagnosed with Type II Diabetes, and I'm trying to find some recipes that are easy to make, still taste good and are good for him. Does anyone have recipes or know of websites that may have these recipes? Also he's a project manager for a construction company which means he's constantly in his truck driving around and has no fridge, what are some lunches and snacks I can pack for him that will survive in room temperature? Thanks in advance for your help! Any other tips are greatly appreciated, he has 3 months to get his sugar under control so I really want to do everything I can to help!

Don't worry about special recipes, just focus on healthy foods that are lean, don't have a ton of carbs, and fruits and veggies. A sandwich and a piece of fruit are a good choice for lunch. Or a cup (just a cup!) of pasta and some sugar-free pudding. Or a small burrito and a few chips and fresh salsa. Start reading labels - you want to keep his carb load under about 40g at each meal. All fruits except bananas (too high in carb) are good, but just one piece at a time. Baby carrots are easy to pack, so are slices of zucchini or green onions. Get him one of those little coolers that he can keep in the front seat. Some of them even plug into the cigarette lighter to stay cold. Transition him to whole grains like whole wheat and rye, if possible. And no sugared drinks, that includes juice!

Diabetes is a very personal condition. We each have a different expression of diabetes which require a slightly different treatment. Diet is tough to learn.
