Eating for food sensitivities--do you have some good, plain, easily digestible f!


Question: No sugar, no dairy, no pork, lots of green vegetables. Do you have any good vegetable soup recipes? Or any advice on simple but tasty food? I have multiple food sensitivities.

I have been eating like the one you are describing. No sugar, no red meat or pork, no dairy. I have felt so good lately and lost 8 pounds too!

So, my favorite recipe is a chicken, black bean and rice dish. Very filling, and very tasty and easy to digest. I buy the black beans (uncooked). Take about a cup and put in a pan with water. Water should be above the beans about half an inch or so. Then let them soak overnight. To cook the black beans, add more water, so it's filled about an inch above the beans, bring to a boil and then simmer for two hours (or until soft). Cook some rice (I like brown rice). Cut up some chicken bits, cook those in a pan (maybe with a little lemon seasoning). Once everything is cooked and ready, mix together. I usually use a cup of black beans to a cup of rice and then add as much chicken as you want.

I then make a dressing to pour on top of it. It contains three tablespoons apple cider vinegar, 1/3 cup olive oil, two garlic gloves minced, and some fresh basil (about 1/2 Tb). Add all together and shake in a container (taste before pouring). Next, add to your bean and rice mixture. This dressing keeps everything moist and not too dry. Keep in the fridge and enjoy!

I usually make a big bowl full and then separate into individual containers to bring to work for lunch. :)
