Yes, they will.
They inspect the eye for signs of Lasik, abrasions, or past injury.

But say they don't, the cheater gets past and some looooong or drunk night spills the beans, its fraudulent enlistment, and they can be charged criminally.

I would imagine that if a job required 20/20 without correction , they would be smart enough to make sure the candidate wasn't wearing contacts for the test.

There are other ways to find out if your 20/20 even without the patient having to read off the snellen chart. : ) So you cant really cheat.
