It happens the same way in all humans
It's a recessive gene that can hide dormant in your heritage, then suddenly pops up when both parents pass on the recessive trait. Even though I'm white, this happened in my family. My grandparents both have brown eyes, yet their daughter (my mother) has green eyes, and all 3 of her kids have blue eyes.
