It's called Myoclonus and unfortunately you can't control it - it's genetic as to whether it happens to you.

Contractions are called positive myoclonus; relaxations are called negative myoclonus. The most common time for people to encounter them is while falling asleep (hypnic jerk), but myoclonic jerks are also a sign of a number of neurological disorders. Yep, I thought it was the electrical impulses in my body relaxing.
i once heard that myclonic jerks are a factor of when we used to live and sleep in trees, you jerk awake as you fall into a deep sleep to remind you to hold on to a tree branch as you sleep. Haha! It might be a load of rubbish but I think its quite an interesting idea
