Part of the reason is because it it is full of lots of slow-moving blood!. Blood with lots of oxygen is bright red, but blood that has been round the body and lost some of the oxygen is darker!. This would account for some of the colour!. The spleen is similar - it is full of slowly-moving deoxygenated blood and is very dark reddish!.
Also, liver cells are packed with enzymes that are busy processing waste products and making useful things!. Many of the enzymes (the 'cytochrome' type of enzymes) have a haem group - this is the same group that is in haemoglobin and makes blood red!. Haem groups can have a slightly different colour in different environments, so I'm guessing that in the cytochrome enzymes maybe the haem is brownish!.
