Question: Skim milk or whole? I need calories, but the fat?
I workout twice a day doing resistance training, and some cardio. I need at least 4000 calories per day. I eat my lean meats, whole grains, fruits, veggies, and so on. I just can't find the space in my stomach to eat enough.

If you're doing all that exercise then most definitely the whole milk. With all that exercise a little fat will be burned in no time. Whole milk :)
Go to the whole, you'll get used to it in no time. Twice a day is too often, it's counter-productive. Start switching over to adding in weight training, muscle building. And don't be obsessed with a calorie goal, just eat. Your body can only use so many calories at a time, over eating is literally flushing money down the toilet.
