The question that you need to ask is - what are you using it for!?
Typically the shake is always going to be better because you control what is going into the mix whereas most all bars - even EAS, Labrada, and P90X - although have quality proteins, also have a substantial amount of sugar!.
Meal Replacement:
Shake: If you make it before hand, drink within 4 hours!. Can blend in fruit, peanut butter, almonds, etc!.!.!.
Bars: Are very convenient to have on the go, especially for the unexpected side trip that would have caused you to miss a meal!.
Pre/ Post-workout:
Stick with a shake here, even if you can't premix just use the powder and water then eat a banana on the side!. Remember that this "meal" is for functionality, not for pleasure!.

Bars: Check the labels closely as all have varying amount and types of simple sugars - the ones that I have used are as follows:

MetRx
Shakes: Get a high quality powder and customize you additives to make it nutritionally sound!. My personal favorite for the powder is Optimum Nutrition Gold Standard, vanilla!. My old standby for a shake is a strawberry-banana with almonds!. You can customize this even further with things like!.!.!.
Peanut butter
Flaxseed oil
Oats
Honey
(pick your own fruit)
Coffee

both are good!.!.!.but it depends on the brands and also when you're using them!.
