How can I convert my 320 lb body in to a 250 lb body of muscle?!

320lbs is quite high and if you're not used to excrcise atall id start off slow, your heart will be under a lot of stress and i wouldnt want you to put too much strain on it.

id say get down the gym and have a word with one of the experts, most will give free advice if you become a member.

But if not, what you should be doing is some excercises involving weights that make your muscles burn, do about 3 sets of 16 reps with a weight you can manage for just about 16 reps before u need to rest. do that for each muscle you want to work on. you can use google to find which muscle groups certain excercises will work on, there are plenty of helpful sites around.
alternate your days and do some power walking or other light cardio for about a half hour on the off days. once you get used to it and your fitness level increases you can start the weights every day. and build your cardio up to an hour.
You'll notice a difference in yourself within weeks.
also have a word with a doctor/nutritionist and let them know what you are planning to do, they will guide you on what you should be eating, but as a rough guide id say get your 5 a day, plenty of whole grains, fruit and veg and white meat and fish. its true red meat has more muscle protein but its not healthy to have it too often. your main goal for now should be reducing body fat and increasing your fitness level and if you're doing the weights as i say, your muscles will take care of themselves.
