Question: Trying to avoid gluten - what names may it be listed under!?

Gluten is not just found in wheat or flour!. It is in wheat, rye, barley, and depending on the source, oats!. It is found in the majority of processed foods under a multitude of names!. For example, many cereals do not have wheat in them but they do have barley malt!. Also not all flours have gluten!. There are rice, soy, and potato flours out there that are gluten free just to name a few!. Two great websites that have extensive lists of the other names gluten hides under are: celiac!.com & celiac!.org!. I was diagnosed with Celiac disease several years ago and have been on a gluten free diet ever since!. It is extremely important that you read every label and when in a restaurant be as specific as possible because many people mistakenly think that the only thing you can't eat is wheat or bread and they may not realize you can't have something as simple as soy sauce because most people wouldn't think it has flour in it!.


Some names gluten may hide under:

* unidentified starch
* modified food starch
* binders
* fillers
* excipients
* extenders
* malt

Just to add a few other 'hidden' sources of gluten:
* commercially grated cheese often has flour in it to stop it clumping together
* asafoetida (hing) - a spice used in Indian cookery
* soy sauce
* many breakfast cereals have barley malt in them - e!.g!. cornflakes!. (There are makes available that are OK - you need to read the label carefully!.)
* oats - opinion is divided!. Wheat, barley and rye are all very closely related, oats are a more distant relation, although they do contain a similar protein, avenin!. Some Celiacs find they can tolerate them, but they must be very pure and not grown or processed in such a way that they become contaminated!. (It will be very clear from the label if they are specially grown and processed this way!.)

It is just wheat or flour!. Watch for those!. You will have to avoid lots of "packaged" foods!. Even the mix for Cornbread has flour!. Also the mix to make a malted milk!. It just turns out best if you eat only foods that are not processed!. Avoid soups at restaurants, most gravies on meats, anything that comes in a sauce!.
