HIV doesn't infect the actual sperm cells themselves - HIV occurs in the seminal fluid that surrounds them.
There is a technique called "sperm washing", which removes the potentially infected fluid from the sperm cells. This is quite commonly used to allow an HIV + man to impregnate his partner while reducing the risk of infecting her with HIV. So far there have not been any cases of HIV transmission among couples using this technique.
