I say scratch it.
However, according to the dictionary, the formal definition of itch is...
"to have or feel a peculiar tingling or uneasy irritation of the skin that causes a desire to scratch the part affected: My nose itches."
But many dictionaries also list an informal use of common words and itch is one them. The informal definition for itch is...
"Informal. to scratch a part that itches."
So, while scratch would be the most commonly accepted way to say it, meaning most people would think it to be the proper way, both scratch and itch are technically "proper".
Scratch it.

I always say scratch it.. Not really sure of the proper saying.

To "scratch" it is how it's supposed to be said but I often say to "itch" it out of habit.
From Dictionary.com, I would gather from this you scratch and itch, and you don't itch a scratch!!!
