muscles get bigger when you use them. so use muscles that are important for stamina and endurance. basically undertake activities that require stamina and endurance.
long distance running, cycling, swimming. these activities will improve your cardiovascular fitness(ability of your heart and lungs to cope with exercise). and your muscles will develop a higher proportion of red fibres (those associated with endurance) red fibres are largely resistant to fatigue and can keep operating as long as they have adequate blood supply and you have warmed up properly.
being vegetarian will not have a negative effect on your ability to develop endurance. if anything it will help (assuming you have a balanced diet and consuming essential vitamins, minerals, fats, carbohydrates and sugars).
results take time - work into this lifestyle choice slowly - don't burn out - stick at it
