The reason we think of turkey as making us sleep is because it contains a good amount of the amino acid tryptophan. Calcium helps the brain use tryptophan to manufacture melatonin, the sleep hormone.
The best bedtime snacks contain both complex carbohydrates and protein, perhaps with some calcium. Dairy products, which contain both tryptophan and calcium, are one of the top foods for sleep.

-dairy: cottage cheese, cheese, milk
-soy milk, tofu, soybean nuts
-meats
-chicken or turkey (esp. if cooked with the bone in)
-whole grains (Cheerios & milk)
-beans (humus on Triscuits)
-lentils
-hazelnuts, peanuts, sesame seeds (tahini), sunflower seeds
-eggs
